Jinju naeng myeon (Cold noodle, Jinju)_진주냉면(진주)

 There are three cold noodles in Korea. Hamheung noodle, Pyongyang noodle, and Jinju noodle. Hamheung and Pyongyang are the geographical names of North Korea and Jinju is a city in South Korea. Jinju noodle was the late-night snacks that nobles enjoyed during the Joseon Dynasty and was not widely known nationwide. Jinju noodle itself does not retain the traditional taste, and it had been lost the original taste in the 1960s.

 Ha Yeon-ok, who I visited this time, is said to be the best place to show the original taste of the Jinju noodles. There are no branches in Seoul and only a few branches near Jinju city. In fact, I came here a couple of times, and actually, it is a place to visit whenever I have somethings to come here Jinju because I fell for special taste of this dish.

한국에는 3대 냉면이 있다. 함흥냉면, 평양냉면 그리고 진주냉면이다. 함흥과 평양은 북한의 지명이며 진주는 대한민국내에 있다. 조선시대부터 양반들이 야참으로 먹었던 것이며 명성에 비해 전국적으로 알려져 있지는 않다. 진주냉면 자체도 옛날 맛을 온전히 간직하고 있지는 못하며 전통 진주냉면은 1960년대에 명맥이 끊겼다고 한다. 

 필자가 이번에 방문한 하연옥은 현재 진주냉면의 원래 모습을 가장 잘 보여주는 곳이라고 한다. 서울에는 지점이 없으며 진주 근처에만 몇 개의 분점을 가지고 있는 터라 이번 기회에 들러 보았다. 사실 필자는 이곳 하연옥을 몇 번 왔었으며 특이한 냉면의 모습에 반해 진주 근처에 볼 일이 있을 때마다 들르는 곳이기도 하다.

 Main restaurant of Ha Yeon-ok is in Jinju and takes about 4 hours by car from Seoul.

 하연옥본점은 진주에 있으며 서울에서 승용차로 약 4시간이 걸린다.

 There is a quite spacious parking lot right in front of the building, however there are so many people who come to eat this cold noodle, so parking can be difficult at lunch and dinner peak time. There is a place to distribute waiting number tickets at the entrance of the first floor and they will let you know separated parking area. Please note that the police control illegal parking on the roadside in front of restaurants.

 건물 바로 앞에 주차장이 있으며 꽤 넓은 편이나 냉면을 먹으러 오는 사람들이 워낙 많아서 점심, 저녁 피크시간에는 주차가 어려울 수 있다. 1층 입구에 대기표를 배부해 주는 곳이 있는데 거기 문의하면 음식점 주변 약간 떨어져 있는 하연옥 주차장을 알려주니 그곳에 주차하시면 되겠다. 참고로 음식점 앞 길가에는 주기적으로 주차단속을 하니 이점 유의하시기 바란다.

 본관 앞 대기하는 사람들의 모습. 2시가 넘어 대기자가 많이 없을 줄 알았는데 대기장소에 앉을 데가 없어 서서 기다렸다.

 If you wait for a call at the information desk in front of the main door, they call the number using the microphone when it is your turn. It is a very crowded restaurant, but it was nice to see their kind service as many as possible.

 정문 앞 안내소에서 대기표를 받고 기다리면 차례가 되었을 때 앞에서 마이크로  번호를 불러준다. 엄청 붐비는 음식점이지만 최대한 친절하게 서비스하려는 모습이 보기 좋았다.

 I waited about 30 minutes and was able to enter. Jinju noodles of Ha Yeon-ok is not only delicious but they seem to spend a great deal of attention on marketing. Jinju noodles are introduced in several books displayed here. I applaud Ha Yeon-ok, who works on restoring the Jinju noodles, which was made in a high-class Korean-style restaurant in Jinju area and is now disappeared.

 30분정도 기다려서 입장할 수 있었다. 진주냉면은 맛도 있지만 마케팅에도 신경을 많이 쓰는 것 같다. 전시되어 있는 몇 권의 책에 진주냉면이 소개되어 있다. 진주지역의 요정에서 만들다 이제는 명맥이 끊어진 진주냉면의 복원에 힘쓰는 하연옥에 박수를 보낸다. 

 There is also a menu for children who cannot eat cold noodles.

 냉면을 못 먹는 아이를 위한 메뉴도 있다.

 The food comes out immediately when it is ordered, and water should be eaten by self-service. Occasionally, employees forget about the contents of the order because they are very busy. If it takes a little long time after ordering, it is better to check with them. Other services are not bad.

 음식은 주문하면 바로 나오는 편이고 물 등은 셀프로 가져다 먹어야 한다. 종업원들이 바쁘게 움직이고 정신이 없어 주문내용을 잊어버리는 경우도 간혹 있으니 혹시 주문한 메뉴가 시간이 좀 걸린다 싶으면 확인해 보는 것이 좋을 것이다. 그 외에 서비스는 나쁘지 않은 편이다.

 The Jinju noodles finally came out. Red broth is not as spicy as it looks. The broth of Hamheung and Pyongyang cold noodles are made boiling meat, but soup of Jinju noodles is made using seafood. Because the noodles are thick and there are a lot of garnish on the cold noodles, other noodles are usually eaten as dessert after eating but Jinju noodles can be considered as one of the main dish.

 기다리던 진주냉면이 드디어 나왔다. 빨간 육수는 보기에 비해 맵지 않다. 함흥냉면과 평양냉면의 육수는 고기를 삶아 만드는데 비해 진주냉면의 육수에는 해물이 들어간다고 한다. 면은 굵은 편이고 냉면위에 고명이 많이 올라가 있어 다른 냉면들이 식사 후 후식으로 주로 먹는데 비해 진주냉면은 냉면 한 그릇만 먹어도 배부르다.  

 It is another main menu of Ha Yeon-ok. Pancake with meat.(Yook Jeon)  It is very delicious to eat with cold noodles.

 하연옥의 또 다른 메인메뉴인 육전이다. 냉면과 함께 먹으면 참 맛있다.

 Like other cold noodles, there are Cold Buckwheat Noodles(Mool noodles) and Spicy Buckwheat Noodles.(Bibim noodles) Bibim cold noodles contain lots of broth comparing to others. We always worry about what to order in a noodle house, but we both order and share. In peace.  

 One of the pleasures of coming to the Jinju is that I can taste Jinju cold noodles. I look forward to the day when Jinju noodles become more famous throughout the country like Pyongyang and Hamheung noodles.

 다른 냉면들과 마찬가지로 진주냉면도 물냉면과 비빔냉면이 있다. 비빔냉면은 육수가 많이 들어가 있다. 냉면집에서 무엇을 주문해야 할까 항상 고민되지만 우리는 둘 다 주문해서 나누어 먹는다. 사이좋게.

 진주에 오는 즐거움 중 하나가 진주냉면을 맛볼 수 있다는 것이다. 진주냉면이 평양냉면과 함흥냉면처럼 전국에 더 유명해 질 날을 기다려 본다.
